Deal or dud?

Ever watch Deal or dud on the news? I do....today I have had my own of sorts. Bought a Nuwave aoven yesterday at the "as seen on tv" store in the Frisco Mall. Yes...lured in by the infomercial!

Soooo....I cook roasted potatoes and squash, cornbread, chicken, steak and boundan in it and I will say DEAL. If I could have figured out how to cook the red beans in it, I would have. Nothing is greasy and all was full of flavor. Will have to let you know how it cleans up. Mom and Aunt Barbara say it's easy, we shall see. At the moment I am too full to even try and wash it!

Now...time to kill, doing laundry, before Tom Brady and the cool commercials take over our tv and afternoon....Colby just left to go help a friend clean house and get ready for the game. WHAT????? His room looks like one from the show Hoarders and he's cleaning someone elses house? Chelsey is holed up in her clean room, watching tv. Danny is awake in his recliner, for the moment anyway.

Guess I will go see what I can find to get into...it will NOT be cleaning Colby's room. He and his friends can do that!

Glad your feeling a little better Dad....and thanks Mom and Aunt Barbara for the Nuwave tips. I like it so far!

Double recipe!

Pot Luck luncheon at work....the request was Banana Pudding or Sopapilla Cheesecake so I made a double recipe of both! Also put a wagon together and bought a few baby gifts to go inside it. And was in bed by 10:30. Having a baby shower for one of my staff. His little boy, Parker Crue, is scheduled to arrive February 15th. Also have a training class and a conference call. Busy Friday, the day will surely go by fast, so no complaints here.

Jamarick, one of Colby's close buddies and one of my other sons signed a full ride scholarship to Midwestern State in Witchita Falls yesterday. Sure going to be strange when all of these kids are not running in and out of our doors...at all hours of the day and night....eatting everything in the refrigerator and pantry...sigh. LOL.

Punxawhatever Phil saw his shadow....6 more weeks of winter. If this is winter, we'll take it!

Now I am off to figure out if the wagon will fit into my car along with two desserts.

329...

I finally used a calculator this morning....today marks the 329th month end that I have made it thru in the Mortgage industry....dang that is a lot of loans to be involved in!

Feeling much more chipper today. Have been pondering my next project or entertainment. Still no decisions, just ideas. Will share if something comes up.

Colby and Chelsey are loving this weather, well Danny and I too for that matter....Chelsey wore shorts all day. Last year, this very week, ice and snow was sliding off Cowboys Stadium and reaching havoc on the Super Bowl. Amazing weather this year. Love it. One of the guys at work reminded me that bugs will be TERRIBLE this year, if we do not have a cold snap or two. True...but not complaining about that now!

Off to watch tv and clean up the mess from dinner. We have Market Street chicken to go....easy cooking night!

Happy hump day tomorrow...I have to start on month number 330!

No more moping around!

we closed this morning...now it is time to pick myself up, dust myself off and start thinking about a new adventure. Not sure what that will be, but look out....my mind has loads of time to come up with something new! Sorry for so many gloomy posts, but as you can see, I was drowning in worry!

Now....it's time to count down the days until graduation, 4 months and 1 day to be exact!

Quick and easy breakfast...

Egg Muffins

Preheat oven to 350 on bake

A dozen eggs

1/2 pound sausage (cooked until no longer pink or be lazy like me and buy a bag of already cooked crumbles - I used the turkey kind)

1/2 cup of graded cheese (I may have added a little more) and again, lazy, I bought the already shredded mild cheddar

Salt, pepper, garlic powder, I didn't measure, just dashed until it looked okay

About an 1/8th of a cup of green onion (just the green) - I heatded these up with the sausage to make them tender

1/4 cup of mayo (this makes them puffy)

2 tablespoons of water (adds to the puff)

Scramble the eggs, add salt, pepper, garlic powder,mayo, water and cheese together. Scramble again, then add sausage and stir. Pour into greased muffin pans , filling each about half full. It made 12 regular sized muffins and 6 big muffins. Bake for 20-25 minutes...until a knife comes out clean. Do not worry if they "puff" up out of the muffin slot while cookingt.....as soon as they hit air, they deflate.

While they were hot I sprinkled a little more cheese on top. A dash of hot sause on top and YUM... Colby ate SIX just standing in the kitchen... Danny liked and Chelsey is still eyeing them, so we will see what she thinks.

The good thing is, only one small skillet (for the sausage and onions), a bowl and muffin tins. Heck of a lot less mess than our traditional breakfast...enjoy, we did!

Happy Saturday all....my plan for the day is to knock out a mountain of laundry, straighten/clean/find the garage and go out to the house and sit on the patio one last time...may take my rod and reel. The lights and water literally go out Monday and a chapter of the Fenter Funny Farm will close....again, bittersweet. And I think I will take the little yucca plants that grew from the roots of the big ones I hated at the entry and my little yellow rose bush out back. Then I can drive down that white rock driveway one last time...and get my car all dusty! And then return tomorrow....somehow gotta let it go.

Our funny Realtor!

As we get to counting down the days to closing, I am getting more worked up and worried about little stuff....and something happening before we can get to the closing table. Yesterday our funny Realtor sent me this text and this is how it went:

Realtor Scott: Pam the pier is gone...no where in sight.

Me: yes, it is in a flood plain, we disclosed that. After the rain let's up, it will reappear.

Realtor Scott: do you think it will appear before 9 am Thursday?

Me: well, if the rain stops, it should. How far up is the water? How close to the trees? (panic sets in)

Loooooonnnnnggggg pause from Realtor Scott, then: it's way up to the trees line.

Me: thinking to myself.....okay I/we have jumped on every request....electric bill summary, who services pool, did we modify plan, where is survey, who is trash service, when will we move the pool table, where are the garage door openers, need keys to barn, sign this, sign that, take this to title company, meet me there for this, meet me there for that, who is Internet service, who built the fence, who build the house, do we own the propane tank, who built the pool, what water service provider, why is alarm beeping,...to name a few. And I sit looking at his text thinking to myself....WHAT the heck am I going to do about the lake being too full? As I ponder my reply....

Realtor Scott replies....I am kidding Pam, all is okay...

All I will say is it is a good thing he said that....I was about to go thru the ceiling tiles of my office! Monday, Monday, it will all be in the past...after I worry all weekend that something might come up and delay closing. Say a little prayer that this doesn't happen!

A quick Happy Birthday to Paul. So happy you stepped into my sweet sisters life so many years ago...love you! Hope your day is wonderful and that the Mavs win big...
